Description
A delicious dessert featuring crispy egg roll wrappers filled with creamy cheesecake and peach filling, coated in cinnamon sugar.
Ingredients
- 2 cups peeled and diced peaches
- 1 tablespoon butter
- 1 tablespoon brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch (optional)
- 1 tablespoon water (if using cornstarch)
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 10 egg roll wrappers
- Vegetable oil for frying
- ¼ cup cinnamon sugar (3 tbsp sugar + 1 tbsp cinnamon)
Instructions
- Melt butter in a skillet. Add peaches, brown sugar, cinnamon, and vanilla. Cook for 5-7 minutes until soft.
- If desired, mix cornstarch with water and add it to the peaches to thicken the mixture. Cook for an additional 1-2 minutes. Let it cool.
- Beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- Lay an egg roll wrapper in a diamond orientation. Add 1 tablespoon of cheesecake filling and 1 tablespoon of peach filling in the center.
- Fold the bottom corner over the filling, fold in the sides, and roll up tightly. Seal the edges with water to secure.
- Heat vegetable oil to 350°F (175°C). Fry the rolls for 2-3 minutes until they are golden brown.
- While still hot, roll the fried egg rolls in cinnamon sugar to coat them evenly.
Notes
- You can use canned peaches if fresh peaches are unavailable. Drain them well before using.
- For a healthier option, bake the rolls instead of frying, brushing them with oil beforehand.
- Serve with whipped cream or a scoop of vanilla ice cream for added indulgence.
