Description

A delicious dessert featuring crispy egg roll wrappers filled with creamy cheesecake and peach filling, coated in cinnamon sugar.


Ingredients

  • 2 cups peeled and diced peaches
  • 1 tablespoon butter
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch (optional)
  • 1 tablespoon water (if using cornstarch)
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 10 egg roll wrappers
  • Vegetable oil for frying
  • ¼ cup cinnamon sugar (3 tbsp sugar + 1 tbsp cinnamon)

Instructions

  1. Melt butter in a skillet. Add peaches, brown sugar, cinnamon, and vanilla. Cook for 5-7 minutes until soft.
  2. If desired, mix cornstarch with water and add it to the peaches to thicken the mixture. Cook for an additional 1-2 minutes. Let it cool.
  3. Beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  4. Lay an egg roll wrapper in a diamond orientation. Add 1 tablespoon of cheesecake filling and 1 tablespoon of peach filling in the center.
  5. Fold the bottom corner over the filling, fold in the sides, and roll up tightly. Seal the edges with water to secure.
  6. Heat vegetable oil to 350°F (175°C). Fry the rolls for 2-3 minutes until they are golden brown.
  7. While still hot, roll the fried egg rolls in cinnamon sugar to coat them evenly.

Notes

  • You can use canned peaches if fresh peaches are unavailable. Drain them well before using.
  • For a healthier option, bake the rolls instead of frying, brushing them with oil beforehand.
  • Serve with whipped cream or a scoop of vanilla ice cream for added indulgence.
