2 ripe peaches, peeled and chopped
1 cup all-purpose flour
3/4 cup granulated sugar
1/2 cup unsalted butter, softened

1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla extract

Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Gently fold in the chopped peaches, making sure not to overmix.
- Drop tablespoon-sized portions of dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the cookies turn golden brown around the edges.
- Allow the cookies to cool on wire racks before serving.
Notes
To prevent sogginess, pat the chopped peaches dry with a paper towel before adding them to the dough.
If using canned peaches, make sure to drain them well and pat them dry.
