Description

This Peach Watermelon Feta Salad combines sweet, juicy fruit with creamy feta, fresh greens, and mint for a light and refreshing dish. It is vibrant, elegant, and perfect for warm days or effortless entertaining.


Ingredients

2 ripe peaches, sliced

2 cups watermelon, cubed

1 cup feta cheese, crumbled

1 cup arugula or mixed greens

1/4 cup fresh mint leaves, chopped

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste


Instructions

  1. Wash the peaches and watermelon thoroughly. Slice the peaches and cube the watermelon into bite-sized pieces.
  2. In a large bowl, combine the arugula or mixed greens with the chopped mint leaves and gently toss together.
  3. Carefully fold in the sliced peaches and cubed watermelon, taking care not to crush the fruit.
  4. Sprinkle the crumbled feta cheese evenly over the salad mixture.
