Instructions

Make the Peanut Butter Mousse:
In a mixing bowl, combine chilled coconut cream, peanut butter, maple syrup, and vanilla extract.
Using an electric mixer, beat until light and fluffy.
Divide the mousse evenly into 4 serving glasses or bowls. Chill in the refrigerator while making the ganache. -
Make the Chocolate Ganache:
In a microwave-safe bowl, combine dark chocolate chips and coconut cream.
Microwave in 20-second intervals, stirring between each, until fully melted and smooth.
Let the ganache cool slightly before using. -
Assemble the Dessert:
Pour a layer of ganache over each mousse portion.
Return the desserts to the refrigerator and chill for at least 1 hour, until set. -
