Ingredients
For the Peanut Butter Mousse:

1 cup (240 ml) coconut cream (chilled) 
- 
1/2 cup (125 g) smooth peanut butter 
- 
1/4 cup (60 ml) maple syrup

1 teaspoon vanilla extract 
For the Chocolate Ganache:
- 
1/2 cup (90 g) dairy-free dark chocolate chips 
- 
1/4 cup (60 ml) coconut cream 
Instructions
- 
Make the Peanut Butter Mousse: 
 In a mixing bowl, combine chilled coconut cream, peanut butter, maple syrup, and vanilla extract.
 Using an electric mixer, beat until light and fluffy.
 Divide the mousse evenly into 4 serving glasses or bowls. Chill in the refrigerator while making the ganache.

Make the Chocolate Ganache: 
 In a microwave-safe bowl, combine dark chocolate chips and coconut cream.
 Microwave in 20-second intervals, stirring between each, until fully melted and smooth.
 Let the ganache cool slightly before using.

Assemble the Dessert: 
 Pour a layer of ganache over each mousse portion.
 Return the desserts to the refrigerator and chill for at least 1 hour, until set.

 Once fully chilled and set, serve cold and enjoy!
Notes

For the best results, use full-fat coconut cream and chill it overnight before whipping.
