Description

A warm, comforting pierogi casserole layered with frozen pierogi, kielbasa, spinach, onions, and plenty of cheese. Easy to assemble, customizable, and perfect for weeknights, potlucks, or holiday meals.


Ingredients

2 Tbsp extra-virgin olive oil, divided

2 lb potato pierogi (or any frozen pierogi), divided

1 (10.5-oz) can cheddar cheese soup or cream of mushroom soup

8 oz cheddar, shredded, divided

15 oz farmer’s cheese or ricotta, divided

1 (5-oz) pkg fresh or frozen spinach, thawed and drained, divided

1/2 medium yellow onion, finely chopped or thinly sliced, divided

1 (12-oz) pkg smoked kielbasa sausage, thinly sliced, divided

Kosher salt, to taste

Thinly sliced scallions, for serving


Instructions

  1. Preheat oven to 375°F and grease a 13×9-inch or 11×7-inch baking dish with 1 tablespoon olive oil. Arrange 12 pierogi in a single layer on the bottom.
  2. In a medium bowl, mix the soup with three-quarters of the shredded cheddar. Pour half of this mixture over the pierogi.
  3. Crumble half of the farmer’s cheese over the top, then sprinkle with half of the spinach, onion, and kielbasa. Season lightly with salt.
  4. Repeat the layers with the remaining pierogi, soup mixture, farmer’s cheese, spinach, onion, and kielbasa.
  5. Top with the remaining cheddar, season lightly with salt, and drizzle the remaining tablespoon of olive oil over the top.
  6. Bake for 45 minutes or until bubbling and heated through.
  7. Switch the oven to broil and broil for about 3 minutes until the top is crispy, watching closely.
  8. Top with scallions before serving.

Notes

Use cheddar or jalapeño pierogi for extra flavor.

Swap cream of potato or cream of broccoli soup for a creamier base.

Replace kielbasa with mushrooms or plant-based sausage for a vegetarian version.

Ensure spinach is well drained to prevent a watery casserole.

Broil briefly at the end for an extra crispy top.
