Ingredients

Boneless, skinless chicken breasts

Fresh pineapple slices

Cauliflower rice

Olive oil

Soy sauce (or tamari for gluten-free)

Honey

Garlic cloves, minced

Fresh ginger, grated

Green onions, chopped

Salt and pepper, to taste


Instructions

  • Marinate the Chicken:

    • In a bowl, whisk together soy sauce, honey, minced garlic, and grated ginger.

    • Add chicken breasts, toss to coat, cover, and refrigerate for at least 30 minutes.

  • Grill Chicken & Pineapple:

    • Preheat grill to medium-high.

    • Grill chicken for 6–7 minutes per side until fully cooked (165°F internal temp).

    • Grill pineapple slices for 2–3 minutes per side until caramelized.

  • Cook Cauliflower Rice:

    • In a skillet, heat olive oil over medium heat.

    • Add cauliflower rice, season with salt and pepper, and sauté for 5–7 minutes until tender.

  • Assemble the Bowls:

    • Slice grilled chicken into strips.

    • Layer cauliflower rice, chicken, and pineapple in serving bowls.

    • Garnish with chopped green onions and serve warm.

Notes

Make it Gluten-Free: Use tamari or coconut aminos instead of soy sauce.
