Ingredients
Boneless, skinless chicken breasts
Fresh pineapple slices
Cauliflower rice
Olive oil
Soy sauce (or tamari for gluten-free)
Honey
Garlic cloves, minced
Fresh ginger, grated
Green onions, chopped
Salt and pepper, to taste
Instructions

Marinate the Chicken: - 
In a bowl, whisk together soy sauce, honey, minced garlic, and grated ginger.

Add chicken breasts, toss to coat, cover, and refrigerate for at least 30 minutes.

Grill Chicken & Pineapple: - 
Preheat grill to medium-high. 
- 
Grill chicken for 6–7 minutes per side until fully cooked (165°F internal temp).

Grill pineapple slices for 2–3 minutes per side until caramelized.

Cook Cauliflower Rice: - 
In a skillet, heat olive oil over medium heat.

Add cauliflower rice, season with salt and pepper, and sauté for 5–7 minutes until tender.

Assemble the Bowls: - 
Slice grilled chicken into strips.

Layer cauliflower rice, chicken, and pineapple in serving bowls.

Garnish with chopped green onions and serve warm.
