Description

Pistachio Butter Blondies are soft, chewy dessert bars with a rich nutty flavor and caramel-like sweetness from brown sugar. They’re simple to prepare and perfect for gatherings, potlucks, or a cozy snack with tea or coffee.


Ingredients

1 cup pistachio butter

1 cup light brown sugar

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

2 large eggs

1 teaspoon pure vanilla extract

1/2 cup semi-sweet chocolate chips (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream the pistachio butter and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Gradually fold in the dry ingredients until just combined. Stir in chocolate chips, if using.
  6. Spread the batter evenly into the prepared dish.
  7. Bake for 20–25 minutes, until the edges are golden and the center is set but slightly soft.
  8. Cool completely before cutting into squares.

Notes

Swirl melted white chocolate on top before baking for a decorative finish.

Sprinkle chopped pistachios over the batter for extra crunch.

Drizzle with a powdered sugar glaze for added sweetness.

Double the recipe for a 9×13-inch pan, adjusting baking time slightly.
