Description

Pizza Pot Pies are individual-sized savory pies filled with pizza flavors, featuring a buttery, golden crust, gooey mozzarella and provolone cheese, and your favorite pizza toppings like pepperoni. Perfect for dinner or as a fun appetizer!


Ingredients

2 tablespoons olive oil

1 medium onion, finely chopped

1 green bell pepper, chopped

4 oz mushrooms, sliced

1½ cups pizza sauce or marinara

½ teaspoon Italian seasoning

½ teaspoon garlic powder

¼ teaspoon red pepper flakes (optional)

1 cup shredded mozzarella cheese

½ cup shredded provolone cheese

12 slices pepperoni (or your favorite toppings)

1 sheet refrigerated pie crust (or homemade)

1 egg, beaten (for egg wash)

Butter or nonstick spray for greasing ramekins


Instructions

  1. Preheat the oven to 400°F (200°C). Lightly butter or spray your ramekins and place them on a baking sheet.
  2. Heat olive oil in a pan over medium heat. Sauté onions, bell peppers, and mushrooms until soft, about 5–6 minutes. Stir in pizza sauce, Italian seasoning, garlic powder, and red pepper flakes. Simmer for 2 minutes, then remove from heat.
  3. Spoon the sauce mixture into ramekins, filling each about ¾ full. Add a mix of mozzarella and provolone on top, followed by pepperoni slices or your chosen toppings.
  4. Cut circles of pie crust slightly larger than your ramekins. Drape one over each ramekin and press the edges lightly to seal. Brush the tops with the beaten egg to give them a golden, glossy finish.
  5. Bake for 20–25 minutes or until the crust is golden brown and crisp. Allow to cool for 5 minutes before serving, as the filling will be very hot.

Notes

Add different vegetables like spinach, zucchini, or olives for extra flavor.

Try using different cheeses, such as cheddar or gouda, for a unique twist.

Use homemade pie crust for an extra buttery and flaky texture.

Add a drizzle of balsamic glaze on top after baking for a gourmet finish.
