Ingredients
8 ounces russet potatoes (about 2 regular-sized potatoes)
3 tablespoons potato starch (or cornstarch)
1 tablespoon unsalted butter (softened or melted)
¼ sheet nori (cut into small strips)
Mozzarella block, shredded (optional for stuffing)
Oil for cooking (neutral oil)
For the Yaki Sauce:
1 tablespoon light soy sauce
1 tablespoon mirin
1 tablespoon granulated sugar
Instructions
- Cook the potatoes by baking, boiling, or microwaving until tender.
- Mash the potato flesh with butter until smooth.
- Add potato starch and mix until dough can hold its shape and is not sticky.
- Divide dough into portions and flatten into patties. Stuff with mozzarella if desired.
- Heat oil in a nonstick pan over medium heat. Fry mochi 3-4 minutes per side until golden brown.
- Prepare yaki sauce by mixing soy sauce, mirin, and sugar in a pan and simmer until thickened.
- Optionally, brush sauce onto mochi or cook mochi in the sauce.
- Wrap each mochi in a strip of nori and serve hot.
