8 ounces wide LoMein noodles, cooked and rinsed
1 tablespoon peanut oil (or vegetable oil)
1 pound ground chicken
1/4 cup sliced green onions (for cooking)
2 tablespoons sliced green onions (for garnish)
1/2 cup low-sodium chicken broth
3 tablespoons mirin sweet cooking rice wine
2 tablespoons dark soy sauce
1 tablespoon minced garlic
2 teaspoons grated ginger
1 teaspoon sesame oil
1/2 teaspoon sriracha hot sauce (optional)
4 cups bagged coleslaw mix
Instructions
- Cook the LoMein noodles according to package instructions, then drain, rinse, and set aside.
- Heat the oil in a large skillet over medium-high heat.
- Add the ground chicken and 1/4 cup green onions and cook for 5–6 minutes until browned and fully cooked.
- In a small bowl, whisk together chicken broth, mirin, dark soy sauce, garlic, ginger, sesame oil, and sriracha.
- Add the cooked noodles, coleslaw mix, and sauce to the skillet.
- Toss gently with tongs and cook for 2–3 minutes until the sauce reduces and coats everything evenly.
- Transfer to a serving bowl and garnish with remaining green onions.
Notes
Bagged coleslaw mix saves prep time and works perfectly in this recipe.
Rice noodles or spaghetti can be substituted for LoMein noodles.
Adjust sriracha or add chili oil for extra heat.
Gluten free noodles and soy sauce can be used if needed.
