Description
This Pumpkin Bread is rich, buttery, and perfectly spiced with cinnamon and nutmeg. Soft, moist, and full of fall flavor, it’s easy to make and versatile enough for breakfast, dessert, or an afternoon snack.
Ingredients
1 ⅔ cups all-purpose flour
1 ¼ cups granulated sugar
1 cup pumpkin puree (not pumpkin pie filling)
½ cup unsalted butter, softened
½ cup warm milk (about 30 seconds in microwave)
2 large eggs, room temperature
2 teaspoons ground cinnamon
1 teaspoon vanilla extract
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon ground nutmeg
¼ teaspoon kosher salt (or ⅛ teaspoon table salt)
Instructions
- Preheat oven to 350°F (175°C).
- Grease and flour a loaf pan or round cake pan.
- In one bowl, whisk together flour, cinnamon, nutmeg, salt, baking powder, and baking soda.
- In another bowl, cream butter and sugar with a hand mixer until light and fluffy, about 2 minutes.
- Add eggs one at a time, mixing well after each addition.
- Stir in pumpkin puree and vanilla until smooth.
- Fold in dry ingredients just until combined, being careful not to overmix.
- Stir in warm milk until batter is smooth.
- Pour batter into prepared pan.
- Bake 45–50 minutes in a round cake pan or 50–55 minutes in a loaf pan, until a toothpick inserted in the center comes out clean.
- Cool 15 minutes in the pan, then loosen edges, invert onto a plate, and cool another 15 minutes before slicing.
Notes
For added flavor, stir in chocolate chips, chopped nuts, or dried cranberries.
A streusel topping or simple glaze makes it extra indulgent.
Do not substitute pumpkin pie filling for pumpkin puree.
For muffins, bake in a muffin tin for 18–22 minutes.
Store tightly wrapped at room temperature for 3 days, in the fridge for 5 days, or freeze for 2 months.
