Pumpkin Pie-Spiced Granola brings the warm flavors of autumn to your breakfast or snack time with a crunchy mix of oats, pumpkin puree, nuts, and warm spices.
Ingredients
3 cups old-fashioned rolled oats
1 cup chopped pecans or walnuts
½ cup pumpkin seeds (pepitas)
¼ cup brown sugar
½ teaspoon salt
1 teaspoon pumpkin pie spice
½ cup pumpkin puree
⅓ cup maple syrup or honey
¼ cup coconut oil or melted butter
1 teaspoon vanilla extract
Optional: ½ cup dried cranberries or raisins
Instructions
- Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine oats, chopped nuts, pumpkin seeds, brown sugar, salt, and pumpkin pie spice. Stir to combine.
- In a separate bowl, whisk together pumpkin puree, maple syrup (or honey), coconut oil (or butter), and vanilla extract until smooth.
- Pour the wet ingredients over the dry ingredients and stir until evenly coated.
- Spread the granola mixture in an even layer on the prepared baking sheet. Use a spoon to create uniform thickness.
- Bake for 35-40 minutes, stirring halfway through to ensure even cooking and browning.
- Let the granola cool completely on the baking sheet. Once cooled, break into clusters.
- Optional: Stir in dried cranberries or raisins for added sweetness.
- Store in an airtight container at room temperature for up to 2 weeks.
Notes
For a gluten-free version, use certified gluten-free oats.
Swap pumpkin puree with sweet potato or butternut squash puree for a different twist.
For added crunch, mix in chia seeds, flaxseeds, or shredded coconut.
Add more spices like cinnamon or nutmeg for a spicier flavor.
