Ingredients

For the Cake:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 2 tbsp red food coloring
  • 1 tsp white distilled vinegar
  • 1 tsp vanilla extract
  • 1 tsp (or more) purple food coloring

For the Cream Cheese Frosting:

  • 1 pound cream cheese, softened
  • 2 sticks unsalted butter, at room temperature
  • 1 tsp vanilla extract
  • 4 cups sifted confectioners’ sugar

Instructions

1. Preheat and Prepare Pans:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. Mix Dry Ingredients:

  1. In a medium bowl, sift together flour, sugar, baking soda, salt, and cocoa powder. Set aside.

3. Mix Wet Ingredients:

  1. In a large bowl, whisk together vegetable oil, buttermilk, eggs, red and purple food coloring, vinegar, and vanilla extract until smooth and well combined.

4. Combine Ingredients:

  1. Gradually mix the dry ingredients into the wet mixture, stirring until the batter is smooth and free of lumps.

5. Bake:

  1. Divide the batter evenly between the prepared pans.
  2. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

6. Prepare the Frosting:

  1. Beat the cream cheese, butter, and vanilla extract together until smooth.
  2. Gradually add the sifted confectioners’ sugar, and continue beating until fluffy and well combined.

7. Assemble the Cake:

  1. Once the cakes are completely cool, spread a layer of cream cheese frosting on top of one cake layer.
  2. Place the second cake layer on top and frost the entire cake with the remaining frosting.

Notes

  • Add More Color: Feel free to adjust the amount of purple food coloring to get your desired shade of purple.
  • Use a Different Frosting: If you prefer a lighter frosting, try using whipped cream cheese or a classic buttercream frosting.
