A vibrant and refreshing mocktail made with homemade raspberry syrup, fresh lime juice, and sparkling water, perfect for any occasion.
Ingredients
1 cup fresh raspberries, plus extra for garnish
½ cup granulated sugar
½ cup water
½ cup fresh lime juice (about 4–5 limes)
4 cups chilled sparkling water or club soda
Lime wedges, for garnish
Fresh mint sprigs, for garnish (optional)

Instructions
- Make the Raspberry Syrup: In a medium saucepan, combine the raspberries, sugar, and water. Bring to a gentle simmer over medium heat, stirring occasionally until the sugar dissolves.
- Mash the Raspberries: Once the sugar dissolves, mash the raspberries with a fork or potato masher to release their juice. Let it simmer for another 5-7 minutes, stirring occasionally, until the syrup thickens slightly.
- Strain the Syrup: Remove the saucepan from heat and strain the mixture through a fine-mesh sieve into a heatproof bowl. Press on the solids to extract as much juice as possible, and discard the seeds and pulp. Let the syrup cool completely.
- Prepare the Lime Juice: Roll the limes firmly on the countertop to release the juice. Cut the limes in half and juice them using a citrus juicer. Aim for about ½ cup of juice. If desired, strain the juice through a fine-mesh sieve to remove any pulp or seeds.
- Assemble the Mocktail: Fill each glass with ice cubes. Add 2-3 tablespoons of the raspberry syrup to each glass, adjusting the amount to taste. Add 2-3 tablespoons of fresh lime juice to each glass, also adjusting to taste.
- Add Sparkling Water: Top each glass with chilled sparkling water or club soda, leaving about an inch of space at the top. Stir gently to combine.
- Garnish and Serve: Garnish with fresh raspberries, a lime wedge, and fresh mint sprigs for an extra touch of color and flavor. Serve immediately and enjoy!
Notes
Sweetness Adjustment: You can adjust the amount of sugar in the raspberry syrup or the syrup itself to suit your sweetness preference.
Spicy Kick: Add a thin slice of jalapeño to the raspberry syrup while simmering for a little heat. Remove the jalapeño slice before straining.
Berry Variations: Feel free to use other berries such as strawberries, blueberries, or blackberries for a different flavor.
Cocktail Version: If you prefer a cocktail, simply add a shot of vodka, gin, or tequila to each glass before topping with sparkling water.
Frozen Version: For a fun frozen twist, blend all the ingredients with ice for a slushy version of the Raspberry Lime Fizz.
Popsicles: Pour the mocktail mixture into popsicle molds and freeze for a refreshing summer treat.
Make Ahead: The raspberry syrup can be made ahead of time and stored in the refrigerator for up to a week. You can also juice the limes ahead of time and store the juice in the refrigerator for up to 24 hours.
