Description

Red White and Blue Cheesecake Salad is a festive, no-bake dessert that combines fresh fruit with a creamy cheesecake filling. Perfect for summer picnics, potlucks, and patriotic holidays like Memorial Day or the 4th of July, this vibrant salad is quick to prepare, visually stunning, and deliciously refreshing.

Ingredients

For the Cheesecake Mixture:

8 ounces cream cheese

3.4 ounces instant cheesecake pudding mix (unprepared)

1 cup liquid French vanilla creamer

For the Fruit:

1 pound strawberries, cut into bite-size pieces

12 ounces blueberries

1/4 cup lemon juice (from ~1 large lemon)

4 large bananas, peeled and sliced

Instructions

  • Make the Cheesecake Mixture: In a medium bowl, whip the cream cheese until smooth. Add the dry pudding mix and continue beating. Slowly add the creamer, 1 tablespoon at a time, until smooth. Refrigerate while you prepare the fruit.

  • Prepare the Fruit: Toss sliced bananas with lemon juice to prevent browning. Add strawberries and blueberries, stirring gently to combine.

  • Assemble the Salad: Fold the cheesecake mixture into the fruit until fully combined. Serve immediately or refrigerate until ready to serve.

Notes

Add More Fruit: Include raspberries or blackberries for added color and flavor.

Substitute Bananas: Replace bananas with grapes or kiwi slices if preferred.

Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days.
