Description

This Retro Pistachio Salad, also known as Watergate Salad, is a creamy, nostalgic dessert salad made with pistachio pudding, marshmallows, and pineapple. It’s the perfect sweet treat for potlucks, holiday gatherings, BBQs, or St. Patrick’s Day. Quick, easy, and no-bake, this classic pistachio fluff will bring back cherished memories!


Ingredients

  • 1 carton (16 ounces) whipped topping
  • 1 package (3.4 ounces) instant pistachio pudding mix
  • 6 to 7 drops green food coloring (optional, for enhanced color)
  • 3 cups miniature marshmallows
  • 1 can (20 ounces) pineapple tidbits, undrained
  • ½ cup chopped pistachios or walnuts
  • Additional whipped topping (optional, for garnish)

Instructions

1️⃣ Mix the Base

  • In a large mixing bowl, combine the whipped topping, pistachio pudding mix, and food coloring (if using).

2️⃣ Fold in the Ingredients

  • Gently fold in the mini marshmallows and pineapple (including juice) until well combined.

3️⃣ Chill the Salad

  • Cover and refrigerate for at least 2 hours to allow the flavors to blend and the salad to set.

4️⃣ Garnish & Serve

  • Just before serving, top with extra whipped topping and a sprinkle of chopped nuts, if desired.

Notes

Add Coconut: Stir in ½ cup shredded coconut for extra texture.
