Description

Roasted halibut with artichokes and lemon is a light Mediterranean-inspired dish where tender fish cooks over flavorful artichokes with garlic, olive oil, and capers. Bright lemon slices and fresh herbs create a fresh, elegant meal that is simple yet satisfying.


Ingredients

1 lb halibut fillet

34 fresh artichokes, trimmed and halved (or 1 can/jar artichoke hearts, drained and halved)

1 lemon, thinly sliced

Extra lemon wedges for serving

2 tbsp olive oil

2 cloves garlic, minced

1 tsp red pepper flakes

1/2 tsp salt

1/4 tsp black pepper

1 tbsp capers (optional)

Fresh oregano or parsley, roughly chopped

1 tbsp vegetable broth (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. If using fresh artichokes, trim tough outer leaves and cut them in half. Optionally soak briefly in lemon water to prevent browning. If using canned or jarred artichokes, drain and halve them.
  3. In a bowl, toss the artichokes with 1 tablespoon olive oil, a pinch of salt, and black pepper.
  4. Spread the artichokes evenly in a baking dish to form a bed.
  5. Place the halibut fillet on top of the artichokes.
  6. Drizzle the remaining tablespoon of olive oil over the fish, then rub the minced garlic, red pepper flakes, remaining salt, black pepper, and capers over the halibut.
  7. Arrange lemon slices on top of the fish and around the artichokes.
  8. Pour vegetable broth into the baking dish around the fish if using.
  9. Roast for 15–20 minutes until the halibut flakes easily with a fork and the artichokes are tender.
  10. Remove from the oven, sprinkle with fresh herbs, and serve warm with lemon wedges.

Notes

Canned or jarred artichoke hearts can be used for convenience and save preparation time.

Add cherry tomatoes or sliced shallots to the baking dish for extra flavor and color.

A small sprinkle of grated parmesan during the last few minutes of roasting adds a subtle savory finish.

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Reheat gently in a 300°F (150°C) oven for 8–10 minutes with a splash of broth or olive oil to prevent drying.
