Description

Roasted Marinated Brussels Sprouts is a flavorful side dish or appetizer made with marinated Brussels sprouts roasted to golden brown perfection.


Ingredients

350 g Brussel sprouts (12 ounces)
3 tablespoons Balsamic vinegar
5 tablespoons Olive oil (Extra Virgin)
1 tablespoon Lemon juice
1.5 teaspoons Dijon mustard
1 tablespoon Maple syrup
½ inch Ginger (fresh, optional)
4 sprigs Rosemary (2 teaspoons, chopped fresh)


Instructions

  1. Whisk together olive oil, balsamic vinegar, lemon juice, maple syrup, Dijon mustard, and rosemary in a bowl to make the marinade.
  2. Trim off the ends of the Brussels sprouts and remove any outer leaves. Cut sprouts in half and mix well with the marinade. Marinate the sprouts in a large bowl, ensuring all are thoroughly coated. Place them in a Ziplock bag or airtight container in the fridge for at least 30 minutes.
  3. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and spread the marinated Brussels sprouts in a single layer. Season with salt and pepper to taste, and toss with the remaining rosemary. Roast in the oven for 20-25 minutes or until edges are golden brown and crispy.
