Description

Rock Cod in Ginger Soy Sauce Marinade features tender fish fillets marinated in a savory, sweet, and tangy mixture, then sautéed to golden perfection for a quick and flavorful seafood meal.


Ingredients

2 pounds rock cod fish

1 teaspoon olive oil

1/3 cup honey

1/2 cup soy sauce

1/2 cup rice vinegar

1 garlic clove, minced

1/2 inch piece fresh ginger, grated

1/2 cup chopped parsley, for garnish


Instructions

  1. Combine honey, soy sauce, rice vinegar, minced garlic, grated ginger, and chopped parsley in a blender or food processor. Blend until smooth and well combined.
  2. Season the rock cod fillets with salt and pepper. Place the fish in a shallow dish or zip-top bag, pour most of the marinade over it (reserve a couple of tablespoons for later), and marinate for 30 minutes to 1 hour in the refrigerator.
  3. Heat olive oil in a large skillet over medium heat. Remove the fish from the marinade, letting excess drip off, and sauté for about 3 minutes per side until golden brown and cooked through.
  4. Drizzle the remaining marinade over the cooked fish, garnish with chopped parsley if desired, and serve immediately.

Notes

Add a chopped chili pepper or a dash of red pepper flakes to the marinade for a spicy twist.

Garnish with cilantro, basil, or green onions for a different flavor profile.

For a smoky flavor, grill the fish instead of sautéing it, brushing with the marinade and grilling for about 3 minutes per side.

Store leftover fish in an airtight container in the refrigerator for up to 2 days.

Reheat by placing the fish in a preheated 350ºF oven for about 10 minutes or warming it in a skillet over low heat.
