Description

Romesco Sauce is a rich, smoky Spanish sauce made from roasted red peppers, almonds, garlic, and smoked paprika. It’s perfect for enhancing grilled vegetables, meats, seafood, and more.


Ingredients

1 cup roasted red peppers (jarred or homemade)

½ cup almonds (blanched or toasted)

23 cloves garlic (roasted for best flavor)

¼ cup fresh parsley (or more for garnish)

1 tablespoon smoked paprika

½ teaspoon salt (to taste)

½ cup extra virgin olive oil


Instructions

  1. Gather all your ingredients. If using raw garlic, roast it beforehand for a milder flavor by placing it in a foil packet and roasting at 400°F (200°C) for 15 minutes.
  2. In a food processor, pulse the almonds until coarsely chopped, leaving some texture.
  3. Add the roasted red peppers, garlic, parsley, smoked paprika, and acidic ingredient (if using) to the food processor.
  4. Sprinkle in the salt and pulse to combine.
  5. While blending, slowly drizzle in the olive oil until the mixture is well-blended and creamy, with a slight texture remaining.
  6. Taste the sauce and adjust seasonings as needed, adding more salt or smoked paprika for extra flavor.
  7. Transfer the sauce to a serving bowl and garnish with fresh parsley. Serve at room temperature or chilled.

Notes

For extra heat, add cayenne pepper or a chopped chili pepper.

If you don’t have almonds, substitute with hazelnuts or walnuts for a different flavor.

Add fresh basil, cilantro, or thyme to experiment with new flavors.
