Description
Romesco Sauce is a rich, smoky Spanish sauce made from roasted red peppers, almonds, garlic, and smoked paprika. It’s perfect for enhancing grilled vegetables, meats, seafood, and more.
Ingredients
1 cup roasted red peppers (jarred or homemade)
½ cup almonds (blanched or toasted)
2–3 cloves garlic (roasted for best flavor)
¼ cup fresh parsley (or more for garnish)
1 tablespoon smoked paprika
½ teaspoon salt (to taste)
½ cup extra virgin olive oil
Instructions
- Gather all your ingredients. If using raw garlic, roast it beforehand for a milder flavor by placing it in a foil packet and roasting at 400°F (200°C) for 15 minutes.
- In a food processor, pulse the almonds until coarsely chopped, leaving some texture.
- Add the roasted red peppers, garlic, parsley, smoked paprika, and acidic ingredient (if using) to the food processor.
- Sprinkle in the salt and pulse to combine.
- While blending, slowly drizzle in the olive oil until the mixture is well-blended and creamy, with a slight texture remaining.
- Taste the sauce and adjust seasonings as needed, adding more salt or smoked paprika for extra flavor.
- Transfer the sauce to a serving bowl and garnish with fresh parsley. Serve at room temperature or chilled.
Notes
For extra heat, add cayenne pepper or a chopped chili pepper.
If you don’t have almonds, substitute with hazelnuts or walnuts for a different flavor.
Add fresh basil, cilantro, or thyme to experiment with new flavors.
Roast your own red peppers for a deeper, smokier flavor.
