Ingredients
1 cup cooked lentils (green or brown)
1 cup finely chopped mushrooms (button or cremini)
1 cup finely chopped onion
1 cup finely chopped celery
1 cup finely chopped carrots
1 cup chopped walnuts
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon soy sauce or tamari (for gluten-free)
1 tablespoon balsamic vinegar
1 pre-made pie crust (9-inch)
¼ cup grated Parmesan cheese (optional)
1 egg for egg wash (optional)

Preheat the oven to 375°F (190°C).

Sauté vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onions, celery, and carrots. Sauté for about 5 minutes until softened.
