Sheet Pan Chicken Fajitas are a convenient, flavorful twist on the classic fajita, offering all the deliciousness of traditional griddled fajitas with minimal effort. Made by roasting chicken and vegetables in the oven, this dish provides perfectly caramelized ingredients and a smoky-sweet flavor. Serve with tortillas and your favorite toppings for a quick, customizable weeknight meal.

Ingredients

For the Chicken and Vegetables:

1 lb boneless, skinless chicken breasts

3 bell peppers (mix of red, green, and yellow)

1 yellow onion

2 tbsp cooking oil (avocado, olive, or vegetable oil)

Juice of 1 lime

8 small flour tortillas (6-inch)

For the Fajita Seasoning:

1 tbsp chili powder

1/2 tbsp paprika

1/2 tsp onion powder

1/4 tsp garlic powder

1/4 tsp cumin

1/8 tsp cayenne pepper

1 tsp sugar

1 tsp salt

Optional toppings:

Sour cream

Fresh cilantro

Shredded cheese

Salsa

Guacamole

Pickled red onion

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Prepare Ingredients: Slice the chicken, bell peppers, and onions into thin strips.

  3. Make the Seasoning: In a small bowl, combine all the fajita seasoning ingredients.

  4. Toss with Oil and Seasoning: Toss the chicken and vegetables with oil and the fajita seasoning until well-coated.

  5. Roast: Spread the chicken and vegetables evenly on a large sheet pan, ensuring not to overcrowd. Roast for 35-40 minutes, stirring halfway, until the chicken is fully cooked and the vegetables are tender and caramelized.

  6. Finish and Serve: Remove from the oven, squeeze fresh lime juice over the fajitas, and serve with warm tortillas and your favorite toppings.

Notes

Spicy Option: Add more cayenne pepper or include chopped jalapeños for extra heat.

Vegetarian Option: Skip the chicken and add more peppers, onions, or a plant-based protein.

Toppings: Customize with sour cream, guacamole, cheese, or salsa for a perfect fajita experience.
