Description

Sheet Pan Lemon Herb Chicken is a quick, flavorful, and satisfying one-pan meal. The juicy chicken breasts marinated in a zesty lemon and herb mix, roasted alongside baby potatoes and cherry tomatoes, create a delicious dinner with minimal cleanup.


Ingredients

For the Chicken:

4 boneless, skinless chicken breasts

3 tablespoons olive oil

Juice of 2 lemons

Zest of 1 lemon

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

For the Vegetables:

1 pound baby potatoes, halved

1 cup cherry tomatoes

Fresh parsley, chopped for garnish


Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. Prepare the Marinade: In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, smoked paprika, salt, and pepper.
  3. Marinate the Chicken: Place the chicken breasts in a zip-top bag or bowl and pour the marinade over them. Seal and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  4. Prepare the Vegetables: Toss halved baby potatoes with a drizzle of olive oil, salt, and pepper. Spread them on one side of the baking sheet.
  5. Assemble the Sheet Pan: After marinating, place the chicken breasts on the baking sheet next to the potatoes. Add cherry tomatoes to the other side of the sheet.
  6. Bake: Bake for 25-30 minutes, or until the chicken reaches 165°F (74°C) and the potatoes are tender.
  7. Garnish and Serve: Remove from the oven and let rest for a few minutes. Garnish with fresh chopped parsley before serving.

Notes
