Ingredients
4 large baking potatoes
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 cup frozen mixed vegetables
1 cup beef broth
2 tbsp tomato paste
1 tsp Worcestershire sauce
Salt and pepper, to taste
1 cup shredded cheddar cheese
Fresh parsley, chopped (for garnish)
Instructions
- Bake the Potatoes: Preheat your oven to 400°F (200°C). Scrub the potatoes, prick them with a fork, and bake for 50-60 minutes or until they are tender when pierced with a fork. Set aside.
- Cook the Shepherd’s Pie Filling: In a large skillet, brown the ground beef over medium heat. Add the diced onion and garlic, cooking until softened, about 3-4 minutes. Stir in the frozen mixed vegetables, beef broth, tomato paste, Worcestershire sauce, salt, and pepper. Simmer the mixture for 10-15 minutes to allow the flavors to blend.
- Prepare the Potatoes: Once the potatoes are done, slice the tops off and scoop out the flesh, leaving a thin layer inside the skins. Mash the potato flesh and mix it into the meat mixture. Taste and adjust seasoning if needed.
