Description

Savor the refreshing and elegant Shrimp, Cucumber, and Avocado Bites, a light and healthy appetizer perfect for any occasion. Crisp cucumber, creamy avocado, and succulent shrimp come together in this easy-to-make, visually stunning dish that will impress your guests at any gathering.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp cayenne pepper
  • Salt and freshly ground black pepper, to taste
  • 1 English cucumber, sliced into ½-inch thick rounds
  • 2 ripe avocados, mashed
  • 1 tbsp fresh lime juice
  • Fresh cilantro or parsley, chopped, for garnish

Instructions

  1. Season the Shrimp: Toss the shrimp with olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper until evenly coated.
  2. Cook the Shrimp: Heat a skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side, or until pink and cooked through. Remove from heat and set aside.
  3. Prepare the Avocado Mixture: In a small bowl, combine the mashed avocados with lime juice, salt, and black pepper. Mix until smooth.
  4. Assemble the Bites: Spoon the avocado mixture onto each cucumber slice.
  5. Add the Shrimp: Top each cucumber slice with a cooked shrimp.
  6. Garnish and Serve: Sprinkle with fresh cilantro or parsley. Serve immediately and enjoy!

Notes

  • Spice Level: Adjust cayenne pepper to your heat preference.
  • Herbs: Swap cilantro for parsley or dill for a different flavor.
  • Avocado Additions: Mix in chopped red onion or jalapeño for extra texture and flavor.
  • Cucumber Alternatives: Try zucchini slices or endive leaves as a base.
