Ingredients

1 lb boneless skinless chicken breasts (or thighs)

4 cups chicken broth

1 cup wild rice blend

1 cup mushrooms, sliced

3 cloves garlic, minced

1 onion, chopped

2 carrots, peeled and diced

2 celery stalks, diced

1 tsp dried rosemary

1 tsp dried thyme

1 tsp dried sage

1 bay leaf

1 cup half and half (or a dairy-free option)

1 tbsp cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)


Instructions

  • Add the chicken, chicken broth, wild rice, mushrooms, garlic, onion, carrots, celery, and herbs (rosemary, thyme, sage, bay leaf) to the slow cooker.

  • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender.

  • Remove the chicken from the slow cooker, shred it with two forks, and return it to the soup.

  • Stir in the half and half and cook for an additional 10 minutes. For a thicker soup, mix the cornstarch with a little water and stir it in.

  • Garnish with fresh parsley and serve hot.
