Description

Tender slow-cooked beef, rich au jus, and melty provolone served on crisped rolls make these Slow Cooker French Dip Sandwiches an easy, deli-style favorite.


Ingredients

For the meat and au jus:

1 tablespoon vegetable oil

3 to 4 pound chuck roast

1 1/2 teaspoons kosher salt (or 1 teaspoon table salt)

1 teaspoon black pepper

2 1/2 cups water

1/4 cup beef broth

1 tablespoon Better Than Bouillon Beef Base

1 bay leaf

2 (1 oz) packets dry onion soup mix

1/2 teaspoon dried thyme (or 1 sprig fresh)

1/2 teaspoon dried rosemary (or 1 sprig fresh)

For the sandwiches:

6 to 8 crusty rolls (ciabatta, sub rolls, etc.)

1/2 cup butter, softened (optional)

1/2 teaspoon garlic powder (optional)

16 ounces provolone cheese, sliced

1 batch Horseradish Sauce


Instructions

  1. Heat a wide skillet over medium-high heat. Pat the roast dry and season evenly with salt.
  2. Add oil to the hot pan and sear the roast on all sides until browned, about 5–6 minutes total.
  3. Transfer the roast to a slow cooker and sprinkle black pepper over it.
  4. Return the skillet to medium heat and add water, broth, and beef base, scraping up browned bits. Pour into the slow cooker.
  5. Add the bay leaf, onion soup mix, thyme, and rosemary.
  6. Cover and cook on low for 8–10 hours until the roast is fork-tender.
  7. Remove the roast, let it rest briefly, and slice it against the grain.
  8. Preheat the broiler and move the oven rack to the highest position.
  9. Slice the rolls and place them open-faced on a baking sheet. Spread with garlic butter if using.
  10. Broil 2–3 minutes until lightly golden, flip, and broil another 2–4 minutes until crisp.
  11. Flip again, layer provolone on both sides, and broil until melted.
  12. Spread horseradish sauce on the rolls, add sliced beef, and assemble the sandwiches.
  13. Ladle hot au jus into bowls for dipping and serve warm.

Notes

Use mozzarella or Monterey Jack for a cheese variation.

Add extra herbs for a stronger herbal flavor.

Mix horseradish directly into the sandwich for more heat.

Broil the rolls slightly longer for extra crunch—watch closely.

Leftover beef and au jus freeze well for several months.
