Description

Soft and chewy cinnamon roll sugar cookies with a delightful glaze.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • For the cinnamon filling:
  • 1/4 cup unsalted butter, melted
  • 1/3 cup brown sugar, packed
  • 1 1/2 teaspoons ground cinnamon
  • For the glaze:
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough into two portions, flatten into discs, and wrap in plastic wrap. Chill for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out one portion of the chilled dough into a rectangle about 1/4 inch thick.
  8. Brush the surface with melted butter, sprinkle evenly with brown sugar and cinnamon.
  9. Starting from the longer side, roll up the dough tightly into a log. Repeat with the second portion.
  10. Slice each log into 1/2-inch thick rounds and place them on prepared baking sheets.
  11. Bake for 9–11 minutes, or until the edges are just beginning to turn golden.
  12. Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack.
  13. For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cookies.
