Description

These Spicy Tuna Roll Bowls deliver all the flavors of a sushi roll in a quick and easy bowl format. With creamy avocado, crunchy vegetables, protein-packed tuna, and a zesty spicy mayo, they’re fresh, customizable, and ready in just 20 minutes.


Ingredients

1 (5 oz) can tuna, drained (Wild Planet Albacore Tuna recommended)

1 avocado, diced

1 mini cucumber or 1/4 English cucumber, thinly sliced

1/2 cup shredded carrots

1/2 cup shelled edamame

1 green onion, sliced on the bias

1 jalapeño, thinly sliced

0.35 oz package dried seaweed snacks, cut into strips

Cooked white rice, brown rice, or cauliflower rice, slightly cooled

Gluten free tamari, for serving

Toasted sesame seeds, for garnish

For the Spicy Mayonnaise:

1/2 cup mayonnaise or vegan mayo

2 tablespoons sriracha

1/2 teaspoon lemon juice

1/2 teaspoon sesame oil


Instructions

  1. In a small bowl, combine mayonnaise, sriracha, lemon juice, and sesame oil to make the spicy mayo. Set aside.
  2. In a medium bowl, mix the drained tuna with about 1/4 cup of the spicy mayo (adjust to taste).
  3. Scoop cooked rice into serving bowls as the base.
  4. Top with the tuna mixture, avocado, cucumber, carrots, edamame, green onion, jalapeño, and seaweed strips.
  5. Drizzle with tamari, add more spicy mayo if desired, and sprinkle with sesame seeds.
  6. Serve immediately and enjoy cold.

Notes

Swap tuna for cooked salmon or tofu for variation.

Use cauliflower rice for a low-carb option.

Add pickled ginger or radish slices for extra crunch.

Prep ingredients ahead, but assemble just before eating for best texture.

Store leftovers in the fridge for up to 2 days; keep avocado fresh by dicing just before serving.
