Ingredients
- ½ cup smooth peanut butter
- ¼ cup soy sauce
- ¼ cup sweet chili sauce
- 1 teaspoon ginger, crushed or finely sliced
- ¼ cup warm water
- 750 g chicken nibbles
- ¼ cup honey-roasted peanuts
- 1 spring onion, finely chopped
- 1 red chili, finely chopped
Instructions
- Prepare Marinade: In a bowl, combine peanut butter, soy sauce, sweet chili sauce, ginger, and warm water. Whisk until smooth.
- Marinate Chicken: Place the chicken nibbles in a large snap-lock bag. Pour the marinade over the chicken, seal the bag, and massage the sauce into the chicken. Marinate for at least 30 minutes or refrigerate overnight.
- Cook Chicken: Preheat the oven to 180°C (350°F). Line a large shallow roasting tray with baking paper. Arrange chicken in a single layer and roast for 30-35 minutes, turning once, until golden and caramelized.
- Garnish: While the chicken cooks, combine honey-roasted peanuts, chopped spring onion, and chili in a small bowl.
- Serve: Once the chicken is done, sprinkle the peanut mixture on top and serve hot.
