Description

Sticky Satay Chicken Nibbles are a mouth-watering appetizer or main dish featuring tender chicken nibbles coated in a rich, savory, and sweet peanut sauce. Roasted to perfection and topped with a crunchy peanut mixture, these chicken nibbles are a crowd-pleaser with a perfect balance of flavors and minimal effort.


Ingredients

  • ½ cup smooth peanut butter
  • ¼ cup soy sauce
  • ¼ cup sweet chili sauce
  • 1 teaspoon ginger, crushed or finely sliced
  • ¼ cup warm water
  • 750 g chicken nibbles
  • ¼ cup honey-roasted peanuts
  • 1 spring onion, finely chopped
  • 1 red chili, finely chopped

Instructions

  • Prepare Marinade: In a bowl, combine peanut butter, soy sauce, sweet chili sauce, ginger, and warm water. Whisk until smooth.
  • Marinate Chicken: Place the chicken nibbles in a large snap-lock bag. Pour the marinade over the chicken, seal the bag, and massage the sauce into the chicken. Marinate for at least 30 minutes or refrigerate overnight.
  • Cook Chicken: Preheat the oven to 180°C (350°F). Line a large shallow roasting tray with baking paper. Arrange chicken in a single layer and roast for 30-35 minutes, turning once, until golden and caramelized.
  • Garnish: While the chicken cooks, combine honey-roasted peanuts, chopped spring onion, and chili in a small bowl.
  • Serve: Once the chicken is done, sprinkle the peanut mixture on top and serve hot.
