1 sheet puff pastry, thawed

Powdered sugar, for dusting

Prep Strawberries: In a small bowl, mix sliced strawberries with 1 tbsp sugar. Set aside to let the juices develop.

Make Almond Filling: In a mixing bowl, beat the softened butter, sugar, and egg yolk until creamy. Add almond flour and almond extract, then beat again until smooth and fluffy.

Prepare Puff Pastry: Lightly flour a surface and roll out the puff pastry to a 9×13-inch rectangle. Cut into 9 equal rectangles.

Assemble Tarts: Place pastry rectangles on a parchment-lined baking sheet. Use a fork to poke the center of each rectangle a few times to prevent puffing. Spread a spoonful of almond filling in the center of each, leaving a 1/2-inch border. Top with 3–4 strawberry slices.
