Description

Strawberry Almond Puff Pastry Tarts are a stunning and delicious dessert featuring crisp, golden puff pastry, a buttery almond filling, and sweet fresh strawberries. Ingredients

For the Strawberry Topping:

1 cup fresh strawberries, sliced

1 tbsp granulated sugar

For the Almond Filling:

1/4 cup unsalted butter, softened (or vegan butter)

1/4 cup granulated sugar

1 egg yolk

1/2 cup almond flour

1/2 tsp almond extract

For the Puff Pastry Tarts:

1 sheet puff pastry, thawed

All-purpose flour, for dusting

1 egg, beaten (for egg wash)

2 tbsp sliced almonds

Powdered sugar, for dusting


Instructions

  • Prep Strawberries: In a small bowl, mix sliced strawberries with 1 tbsp sugar. Set aside to let the juices develop.

  • Make Almond Filling: In a mixing bowl, beat the softened butter, sugar, and egg yolk until creamy. Add almond flour and almond extract, then beat again until smooth and fluffy.

  • Prepare Puff Pastry: Lightly flour a surface and roll out the puff pastry to a 9×13-inch rectangle. Cut into 9 equal rectangles.

  • Assemble Tarts: Place pastry rectangles on a parchment-lined baking sheet. Use a fork to poke the center of each rectangle a few times to prevent puffing. Spread a spoonful of almond filling in the center of each, leaving a 1/2-inch border. Top with 3–4 strawberry slices.

  • Finish: Brush the pastry edges with beaten egg and sprinkle with sliced almonds.

  • Bake: Bake at 375°F (190°C) for 22–25 minutes or until the edges are golden and the filling is set.

  • Cool and Garnish: Allow to cool slightly, then dust with powdered sugar before serving.

Fruit Swaps: Substitute strawberries with raspberries, blueberries, or thinly sliced peaches.

Vegan-Friendly: Use dairy-free butter and a plant-based egg wash alternative like almond milk mixed with maple syrup.
