Make the Strawberry Jam:
In a pot, combine fresh or frozen strawberries, granulated sugar, and water. Cook over medium-high heat until the mixture thickens. Let it cool. -
Prepare the Cake:
Preheat the oven to 350°F (175°C). In a large bowl, whisk the dry ingredients: flour, cocoa powder, baking powder, baking soda, and salt. In a separate bowl, beat together the melted butter, brown sugar, eggs, and milk. Gradually combine the wet and dry ingredients and mix until smooth. Pour the batter into prepared cake pans and bake for 30-35 minutes, or until a toothpick comes out clean. Let the cake layers cool. -
Assemble the Cake:
Spread the homemade strawberry jam evenly between the cooled cake layers. Frost the top and sides with the strawberry cream cheese frosting. -
Decorate:
Garnish with fresh strawberries on top for a beautiful finish.
Notes
- You can substitute strawberry jam with raspberry or blueberry jam for a different flavor twist.
- Add chocolate chips to the cake batter for an extra chocolatey taste.
- For an extra creamy frosting, add a bit of heavy cream to the cream cheese frosting.
