1 lb fresh strawberries (divided)
1 cup water
½ cup sugar
3 oz strawberry gelatin powder
¼ cup cornstarch

Prepare the Cookie Crust: Rub a small amount of oil on your hands and evenly press the sugar cookie dough onto the baking sheet. Spread until the surface is fully covered.

Make the Cream Cheese Frosting: Beat softened cream cheese and butter until smooth. Add 1 cup powdered sugar and vanilla, and beat until fluffy. Add remaining powdered sugar and mix until fully incorporated.
