Ingredients

For the Sugar Cookie Crust:

16 oz store-bought sugar cookie dough (softened)

For the Cream Cheese Frosting:

8 oz cream cheese (softened)

½ cup butter (softened, salted)

2 cups powdered sugar

1 tsp vanilla extract

For the Strawberry Layer:

1 lb fresh strawberries (divided)

1 cup water

½ cup sugar

3 oz strawberry gelatin powder

¼ cup cornstarch


Instructions

  • Preheat the Oven: Set the oven to 350°F (175°C) and line a 10×15 inch rimmed baking sheet with parchment paper or lightly spray with oil.

  • Prepare the Cookie Crust: Rub a small amount of oil on your hands and evenly press the sugar cookie dough onto the baking sheet. Spread until the surface is fully covered.

  • Bake: Bake the crust for 17–18 minutes or until lightly golden around the edges. Let it cool for 15 minutes.

  • Make the Cream Cheese Frosting: Beat softened cream cheese and butter until smooth. Add 1 cup powdered sugar and vanilla, and beat until fluffy. Add remaining powdered sugar and mix until fully incorporated.

  • Spread the Frosting: Once the cookie crust has cooled, evenly spread the cream cheese frosting on top.

  • Prepare the Strawberry Layer: Dice 4 strawberries and mash them. Slice the remaining strawberries into ¼-inch slices.

  • Make the Glaze: In a medium saucepan, combine gelatin, water, sugar, cornstarch, and mashed strawberries. Stir over medium heat until the mixture thickens (about 5 minutes).

  • Cool the Glaze: Let the glaze cool for 15 minutes until it’s warm but not hot.

  • Assemble the Pizza: Spread a thin layer of glaze over the frosting, layer the sliced strawberries on top, and spoon the remaining glaze over the fruit.

  • Chill and Serve: Refrigerate for at least 20 minutes to set the glaze. Slice and serve!

Notes

For a gluten-free option, use gluten-free sugar cookie dough.

Try other fruits like raspberries, blackberries, or peaches for variety.

Add a teaspoon of lemon zest to the frosting for extra brightness.
