Ingredients

For the Sorbet:

600 grams fresh or frozen strawberries, hulled

50 grams granulated sugar (or preferred sweetener)

10 millilitres freshly squeezed lemon juice (or zest from 1 lemon)

Pinch of fine sea salt (optional)


Instructions

  1. Prepare the Strawberries: If you’re using fresh strawberries, remove the stems and freeze them for a few hours. If you’re using frozen strawberries, you can skip this step.
  2. Blend the Ingredients: Add the frozen strawberries, sugar, lemon juice (or zest), and a pinch of sea salt (optional) to a high-speed blender. Process until smooth and the sorbet reaches a soft, sorbet-like consistency.
  3. For Regular Blenders: If using a regular blender, allow the strawberries to thaw slightly (about 5 minutes) for easier blending. Then, blend the strawberries until smooth.
  4. Churn for Smoothness: For an ultra-smooth texture, transfer the puréed mixture to an ice cream machine and churn according to the manufacturer’s instructions. If you don’t have an ice cream machine, freeze the mixture in a shallow dish and stir every 30 minutes until it reaches a scoopable consistency.
  5. Serve and Enjoy: Serve immediately for a soft and refreshing sorbet, or freeze for a firmer texture. Let the sorbet sit at room temperature for a few minutes to soften before serving if it becomes too hard.

Best Texture: For the best texture, it’s recommended to serve the sorbet immediately after churning. If you freeze it for later, let it soften for a few minutes before serving to achieve the perfect consistency.
