A hearty stuffed breakfast loaf made with crusty baguette bread filled with fluffy eggs, savory beef sausage, green onions, and melted cheese, baked until golden and sliceable for an impressive brunch centerpiece.
Ingredients
2 baguette-style loaves (10–12 inches each)
10 large eggs
10 strips beef breakfast sausage, cooked and chopped
1 1/2 cups shredded cheddar or marbled cheese
2/3 cup milk
4 green onions, thinly sliced
1 teaspoon garlic powder
1 teaspoon Dijon mustard
Salt, to taste
Black pepper, to taste
Butter or oil, for brushing
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Slice the top third off each baguette and hollow out the interior, leaving a 1/2-inch shell.
- In a large bowl, whisk together eggs, milk, Dijon mustard, garlic powder, salt, and pepper until smooth.
- Stir in the chopped sausage, most of the cheese, and most of the green onions.
- Place the hollowed loaves on the baking sheet and evenly pour the egg mixture into each loaf.
- Top with remaining cheese and brush the outside of the bread lightly with butter or oil.
- Bake for 25–30 minutes until golden brown and the eggs are fully set.
- Let rest for 5–10 minutes before slicing and serving.
Notes
Letting the loaf rest helps the eggs set for cleaner slices.
Swap cheeses or add vegetables like spinach or peppers for variety.
Do not overbake to keep the eggs soft and creamy.
Best served warm but reheats well.
