Description

Stuffed Chicken Breast combines tender chicken with a creamy filling of spinach, cream cheese, mozzarella, and roasted red peppers, creating a flavorful and satisfying meal.


Ingredients

4 boneless, skinless chicken breasts

1 cup spinach, chopped

½ cup cream cheese, softened

½ cup mozzarella cheese, shredded

½ cup roasted red peppers, chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon paprika

Fresh parsley, for garnish


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Filling: In a mixing bowl, combine spinach, cream cheese, mozzarella, roasted red peppers, garlic, oregano, salt, and pepper. Mix until well combined.
  3. Prepare Chicken Breasts: Carefully cut a pocket into the thickest part of each chicken breast, being cautious not to cut all the way through.
  4. Stuff the Chicken: Spoon the filling into each chicken pocket, packing it in tightly. Use toothpicks to secure if needed.
  5. Season the Chicken: Rub the outsides of the stuffed chicken breasts with olive oil, paprika, and additional salt and pepper.
  6. Bake: Place the stuffed chicken breasts in a baking dish and bake for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Rest the Chicken: Remove from the oven and let the chicken rest for 5-10 minutes to retain its juices.
  8. Serve: Remove toothpicks, garnish with parsley, and serve immediately.

Notes

For a different flavor, try adding sun-dried tomatoes, feta cheese, or artichokes to the filling.
