Ingredients

For the Meatballs:

1 lb ground beef

1 lb ground chicken

1 cup breadcrumbs

1 large egg

2 tsp garlic powder

1 tsp salt

1 tsp black pepper

½ tsp allspice

½ tsp ground nutmeg

¼ cup fresh parsley, chopped

For the Soup:

4 cups beef or chicken broth

1 onion, diced

2 carrots, diced

2 celery stalks, diced

2 tbsp all-purpose flour

1 cup heavy cream

2 tbsp butter

Optional: 1 tbsp Worcestershire sauce and Dijon mustard


Instructions

  1. Prepare the Meatballs: In a large mixing bowl, combine ground beef, ground chicken, breadcrumbs, garlic powder, egg, salt, black pepper, allspice, nutmeg, and parsley. Mix well and shape into 1-inch meatballs.
  2. Bake the Meatballs: Preheat the oven to 400°F (200°C). Place meatballs on a baking sheet lined with parchment paper and bake for 15 minutes or until browned.
  3. Make the Soup: In a Dutch oven, melt butter over medium heat. Add diced onion, carrots, and celery, and sauté for about 5 minutes until softened.
  4. Thicken the Soup: Sprinkle flour over the vegetables, stirring to coat. Gradually add broth and cream, stirring until combined. Bring to a boil, then simmer for 10 minutes.
  5. Combine Meatballs: Add the baked meatballs to the soup and simmer for an additional 10-15 minutes, allowing the flavors to meld.

Notes
