Description

Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 ripe banana, mashed

1 cup buttermilk

1 large egg

2 tablespoons melted butter (plus extra for cooking)

1 teaspoon vanilla extract

Optional toppings: maple syrup, sliced bananas, nuts, whipped cream


Instructions

  1. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. Whisk until well blended.
  2. In a separate bowl, mash the ripe banana with a fork until smooth. Add the buttermilk, egg, melted butter, and vanilla extract. Mix until fully combined.
  3. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; small lumps are fine and will help create a fluffy texture.
  4. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook the other side until golden brown, another 2 minutes.
  6. Continue cooking the remaining batter, greasing the skillet as needed between pancakes.
  7. Stack pancakes on a plate and serve with your favorite toppings such as maple syrup, fresh sliced bananas, nuts, or whipped cream.

Notes

For a vegan version, substitute the egg with a flax egg and use plant-based milk like almond milk.
