Ingredients
1/2 cup tahini
1/4 cup maple syrup
2 tbsp coconut oil
4 cups brown rice krispies
1 tsp vanilla extract
1/4 tsp salt
1/2 cup chocolate chips
1/2 cup pretzels, broken into pieces
Sesame seeds (optional, for topping)
Instructions
-
Prepare the Base: In a small pot, melt the tahini, maple syrup, and salt over low heat, stirring until combined. Remove from heat and add the vanilla extract.
-
Coat the Cereal: Stir in the brown rice krispies until they are evenly coated with the tahini mixture.
-
Press into Pan: Press the krispie mixture into an 8-inch square pan, spreading it evenly and pressing firmly.
-
Make the Chocolate Topping: In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring until smooth. Pour the melted chocolate over the pressed krispie mixture.
-
Top and Chill: Sprinkle the broken pretzels and sesame seeds (if using) on top. Refrigerate for 1 hour or freeze for 30 minutes until set.
-
Serve: Once the bars are set, slice into 9-12 bars and serve.
Notes
Nut-Free Option: Swap tahini for sunflower seed butter to make these bars nut-free.
Flavor Boost: Add a dash of cinnamon, nutmeg, or a pinch of sea salt to enhance the flavor.
Toppings: Feel free to use chopped nuts like pistachios or almonds instead of pretzels for a different twist.
