Ingredients
1/3 cup goat cheese
1 tablespoon honey, plus extra for topping
2 large apricots
Butter for brushing the apricots
1 tablespoon toasted pine nuts
1 tablespoon chopped fresh mint
Ground cardamom for sprinkling (optional)
Instructions
- In a small bowl, fold together the goat cheese and honey until smooth and creamy. Set aside.
- Cut the apricots in half and remove the pits. Brush the cut sides with melted butter.
- Preheat your grill to medium-high heat. Grill the apricot halves, cut side down, for 3-5 minutes until grill marks appear and the fruit caramelizes.
- Remove the apricots from the grill and place them on a platter. Fill each apricot half with the goat cheese mixture.
- Sprinkle with toasted pine nuts, fresh mint, and a drizzle of honey. Optionally, sprinkle with ground cardamom.
