Description

This Sweet Potato, Feta & Caramelised Onion Tart is a delicious combination of buttery puff pastry, roasted sweet potatoes, tangy feta cheese, and golden caramelized onions. Perfect for lunch, light dinner, or as an elegant appetizer, this vegetarian-friendly tart is easy to prepare, flavorful, and will quickly become a favorite for any occasion.


Ingredients

For the Tart:

1 sheet puff pastry, thawed

2 medium sweet potatoes, peeled and sliced thin

1 tbsp olive oil

Salt and black pepper, to taste

1 large onion, thinly sliced

1 tbsp butter

1 tsp brown sugar

4 oz feta cheese, crumbled

1 tsp fresh thyme leaves

1 egg, beaten (for egg wash)


Instructions

  • Preheat and Roast the Sweet Potatoes: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Toss the sweet potato slices with olive oil, salt, and pepper. Roast them for 20 minutes or until tender. Set them aside to cool slightly.

  • Caramelize the Onions: In a skillet over medium heat, melt the butter and sauté the onions until softened. Add brown sugar and continue cooking for about 15 minutes, until the onions are golden and caramelized. Remove from heat and set aside.

  • Prepare the Puff Pastry: On a lightly floured surface, roll out the puff pastry slightly and place it on a baking sheet. Score a 1-inch border around the edges without cutting all the way through. This will help create a raised edge when baked.

  • Assemble the Tart: Spread the caramelized onions inside the border of the puff pastry. Layer the roasted sweet potato slices on top, then sprinkle with crumbled feta and fresh thyme leaves.

  • Egg Wash and Bake: Brush the pastry border with the beaten egg. Bake for 20-25 minutes, or until the pastry is puffed and golden.

  • Serve: Allow the tart to cool slightly before slicing. Serve warm or at room temperature.

Notes

Add a Drizzle of Honey: For extra sweetness, drizzle some honey over the tart just before serving.

Add Greens: Top with spinach or arugula before baking for a burst of color and flavor.

Cheese Swap: You can substitute feta with goat cheese for a tangier flavor.
