Description

Sweet Potato Wellington is a stunning vegetarian dish that combines sweet, spiced mashed sweet potatoes with a molten center of tangy goat cheese, all wrapped in flaky puff pastry. A true showstopper for any occasion.


Ingredients

Sweet potatoes (peeled and cubed)

Butter

Cinnamon

Smoked paprika

Salt and pepper

Goat cheese log (cut into rounds)

Honey or fresh thyme (optional)

All-butter puff pastry (thawed)

Egg (for egg wash)

Sesame seeds or flaky salt (optional, for garnish)


Instructions

  1. Preheat your oven to 200°C (400°F). Spread peeled and cubed sweet potatoes on a baking tray and roast for 25 minutes until fork-tender. Mash with butter, cinnamon, smoked paprika, salt, and pepper while still warm.
  2. Slice goat cheese into four equal rounds. Optionally, drizzle honey or add thyme to each round for extra flavor. Freeze cheese rounds for 10 minutes to firm up.
  3. Roll out the puff pastry on a lightly floured surface. Cut into four equal squares. Place a spoonful of mashed sweet potato in the center of each square, followed by a frozen goat cheese round. Top with more sweet potato, covering the cheese completely.
  4. Fold the pastry over the filling, sealing the edges tightly. Place seam-side down on a baking sheet lined with parchment paper. Brush with egg wash, score the tops if desired, and sprinkle with sesame seeds or flaky salt.
  5. Bake at 200°C (400°F) for 20–25 minutes until golden and puffed. Let the Wellingtons rest for 5 minutes before slicing to allow the cheese to settle.

Notes

For a variation, try using ricotta or cream cheese instead of goat cheese for a different filling flavor.

Add fresh herbs like rosemary or thyme to the sweet potato mash for added flavor.

For a spicy twist, add chili flakes to the sweet potato mash for a kick.

For a heartier version, incorporate sautéed spinach or kale into the filling before wrapping in pastry.
