Description
Sweetcorn and Jalapeño Fritters with a Fried Egg are savory, crispy fritters filled with sweetcorn, spicy jalapeños, and melty cheese, topped with a fried egg for a satisfying meal. Perfect for breakfast, brunch, or a light dinner.
Ingredients
1 cup sweetcorn (fresh or canned)
½ cup all-purpose flour
1 large egg
½ cup grated cheese (cheddar or your choice)
1–2 jalapeños, finely chopped (adjust based on heat preference)
2 tablespoons green onion, finely chopped
1 teaspoon baking powder
Salt and pepper, to taste
Oil for frying
2 large eggs (for frying on top)
Optional: sour cream or avocado for serving
Instructions
- If you’re using fresh sweetcorn, cut the kernels from the cob. If using canned corn, drain and rinse it beforehand to remove excess salt.
- In a mixing bowl, combine the flour, baking powder, salt, and pepper. Stir until evenly mixed.
- In a separate bowl, beat the large egg and add it to the dry mixture. Stir until combined.
- Add the sweetcorn, chopped jalapeños, grated cheese, and green onions to the batter. Mix well until all ingredients are evenly coated.
- Heat oil in a frying pan over medium heat, adding enough to coat the bottom of the pan (about ¼ inch deep). Allow it to heat for a minute or two.
- Drop spoonfuls of the fritter batter into the hot oil, flattening each slightly with the back of the spoon. Fry for about 3-4 minutes on each side or until golden brown and crispy.
- Once cooked, transfer the fritters to a plate lined with paper towels to absorb excess oil.
- In the same pan, add a little more oil if needed, and fry the eggs sunny-side up or to your desired doneness.
- Place a few fritters on a plate, top with a fried egg, and garnish with optional sour cream or avocado.
Notes
Adjust the number of jalapeños based on your preferred spice level. For a milder version, use one jalapeño or omit it.
For a vegan version, replace the egg and cheese with plant-based alternatives like flax egg and vegan cheese.
Consider adding cilantro or parsley for extra flavor in the fritter batter.
