Description

Sweetcorn and Jalapeño Fritters with a Fried Egg are savory, crispy fritters filled with sweetcorn, spicy jalapeños, and melty cheese, topped with a fried egg for a satisfying meal. Perfect for breakfast, brunch, or a light dinner.


Ingredients

1 cup sweetcorn (fresh or canned)

½ cup all-purpose flour

1 large egg

½ cup grated cheese (cheddar or your choice)

12 jalapeños, finely chopped (adjust based on heat preference)

2 tablespoons green onion, finely chopped

1 teaspoon baking powder

Salt and pepper, to taste

Oil for frying

2 large eggs (for frying on top)

Optional: sour cream or avocado for serving


Instructions

  1. If you’re using fresh sweetcorn, cut the kernels from the cob. If using canned corn, drain and rinse it beforehand to remove excess salt.
  2. In a mixing bowl, combine the flour, baking powder, salt, and pepper. Stir until evenly mixed.
  3. In a separate bowl, beat the large egg and add it to the dry mixture. Stir until combined.
  4. Add the sweetcorn, chopped jalapeños, grated cheese, and green onions to the batter. Mix well until all ingredients are evenly coated.
  5. Heat oil in a frying pan over medium heat, adding enough to coat the bottom of the pan (about ¼ inch deep). Allow it to heat for a minute or two.
  6. Drop spoonfuls of the fritter batter into the hot oil, flattening each slightly with the back of the spoon. Fry for about 3-4 minutes on each side or until golden brown and crispy.
  7. Once cooked, transfer the fritters to a plate lined with paper towels to absorb excess oil.
  8. In the same pan, add a little more oil if needed, and fry the eggs sunny-side up or to your desired doneness.
  9. Place a few fritters on a plate, top with a fried egg, and garnish with optional sour cream or avocado.

Notes

Adjust the number of jalapeños based on your preferred spice level. For a milder version, use one jalapeño or omit it.

For a vegan version, replace the egg and cheese with plant-based alternatives like flax egg and vegan cheese.

Consider adding cilantro or parsley for extra flavor in the fritter batter.
