Description

Tavuk Sote is a classic Turkish chicken stew made with tender chicken pieces simmered in a rich tomato-based sauce with peppers, onions, and warm spices for a comforting and flavorful one-pan meal.


Ingredients

500 g (1 lb) boneless, skinless chicken breast or thighs, cut into bite-sized pieces

2 tablespoons olive oil or vegetable oil

1 large onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 medium tomatoes, peeled and chopped (or 1 can diced tomatoes)

1 teaspoon tomato paste

1 teaspoon paprika

1 teaspoon cumin

1 teaspoon dried oregano

1 teaspoon salt (adjust to taste)

1/2 teaspoon ground black pepper

A pinch of red pepper flakes (optional)

1 cup chicken broth or water

1 tablespoon lemon juice (optional)

1 tablespoon fresh parsley, chopped (optional garnish)


Instructions

  1. Prepare the chicken and vegetables by chopping everything before cooking.
  2. Heat oil in a large skillet over medium-high heat.
  3. Add chicken and sauté for 5–7 minutes until lightly browned; remove and set aside.
  4. In the same pan, sauté onion and garlic until soft and fragrant.
  5. Add bell peppers and cook until slightly softened.
  6. Stir in tomatoes, tomato paste, paprika, cumin, oregano, salt, black pepper, and red pepper flakes.
  7. Return the chicken to the pan and pour in the broth or water.
  8. Bring to a gentle simmer and cook for 10–15 minutes until the sauce thickens slightly.
  9. Taste and adjust seasoning, adding lemon juice if desired.
  10. Garnish with parsley and serve hot.

Notes

Chicken thighs provide extra juiciness.

Simmer uncovered to thicken the sauce if needed.

Flavors deepen when made ahead.

Serve with rice, bulgur, couscous, or bread.
