Ingredients
- 2 large onions, thinly sliced
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1 cup buttermilk
- 1 large egg
- Vegetable oil, for frying
- Optional: Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, combine the thinly sliced onions with a pinch of salt. Let them sit for 10 minutes to draw out excess moisture. Drain well.
- In another bowl, whisk together the flour, baking powder, salt, black pepper, and paprika.
- In a separate bowl, beat together the buttermilk and egg.
- Add the wet ingredients to the dry ingredients and stir until just combined—do not overmix.
- Fold in the drained onions until evenly coated with the batter.
- In a large skillet or deep fryer, heat vegetable oil over medium heat.
- Drop spoonfuls of the onion batter into the hot oil, being careful not to overcrowd the pan.
- Fry for 3–4 minutes on each side, or until golden brown and crispy.
- Remove fritters with a slotted spoon and drain on paper towels.
- Serve hot, garnished with chopped parsley if desired.
