Description

Blackberry Dumplings are a delightful dessert featuring tender dumplings simmered in a vibrant blackberry sauce, perfect for serving with ice cream or whipped cream.

Ingredients

  • 1 quart fresh or frozen blackberries, rinsed
  • 1 cup water
  • 1 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp lemon extract
  • Dumplings:
  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 2/3 cup milk

Instructions

  1. In a large, wide saucepan, combine the blackberries, water, 1 cup sugar, 1/4 tsp salt, and lemon extract.
  2. Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes.
  3. In a separate bowl, mix the flour, 1 tbsp sugar, baking powder, 1/4 tsp salt, nutmeg, and milk until a soft dough forms.
  4. Drop spoonfuls of the dough into the simmering berry mixture.
  5. Cover the pan tightly with a lid and simmer for 15 minutes without removing the lid.
  6. Serve hot with vanilla ice cream or fresh whipped cream.

Notes

  • Ensure the lid is not removed during the 15-minute simmering to allow the dumplings to cook properly.
  • Adjust sugar levels to taste depending on the sweetness of the blackberries.
  • Fresh whipped cream or ice cream makes a perfect pairing.
