Ingredients
- 1 garlic head
- Sprinkle of salt
- 2 tbsp olive oil
- 3 ½ tbsp butter (softened)
- 1 tbsp fresh parsley (chopped)
- ⅓ cup warm milk
- 2 ¼ tsp active dry yeast (1 packet)
- 2 tbsp honey
- 1 ⅓ cups all-purpose flour
- ½ cup bread flour
- 1 ½ tbsp milk powder (optional)
- 3 tbsp butter (softened)
- 2 large egg yolks
- 1 ½ tsp salt
- 1 tbsp sugar
- 7 oz mozzarella cheese (shredded)
- Garlic butter (prepared earlier)
- 1 egg (for egg wash)
Instructions
- Preheat the oven to 320°F (160°C). Cut the top off a garlic head, drizzle with olive oil, sprinkle with salt, cover with aluminum foil, and roast for about 2 hours until buttery soft.
- After roasting, squeeze the garlic from its skins and mix with softened butter, chopped parsley, and 2 tablespoons of the garlic oil. Set aside.
- In a bowl, combine warm milk, active dry yeast, and honey. Let it sit for about 10 minutes until frothy.
- In a mixing bowl, combine all-purpose flour, bread flour, sugar, milk powder (if using), softened butter, salt, egg yolks, and the yeast mixture. Knead the dough using a dough hook attachment on medium speed for 15-20 minutes until soft and smooth.
- Place the dough in a covered bowl and let it rise in a warm place (around 85°F or 29°C) for 1 hour 30 minutes, or until it doubles in size.
- Roll the dough to about 1/8 inch thickness. Spread the prepared garlic butter evenly over the surface.
- Sprinkle the shredded mozzarella cheese on top of the garlic butter, then tightly roll the dough into a log.
- Using a knife or dental floss, cut the rolled dough into 6 equal portions.
- Place the rolls on a baking sheet, cover, and let them proof for another 30 minutes, or until puffy.
- Preheat the oven to 350°F (175°C). Brush the rolls with egg wash (beaten egg) and bake for 20-25 minutes, checking at 20 minutes.
- Once baked, brush the rolls with the leftover garlic butter and sprinkle with chopped parsley before serving.
Notes
- Milk powder is optional but adds extra richness to the dough.
- To check if the rolls are baked, tap on them to see if they sound hollow.
- Use dental floss to cut dough rolls cleanly without squishing them.
