Description

The Best Creamy Cheese Grits are the ultimate Southern comfort food, combining tender stone-ground grits with a rich cheese sauce made from chicken broth, half and half, and butter for a creamy, indulgent dish.


Ingredients

3 cups chicken broth

2 cups half and half

1 teaspoon kosher salt

4 tablespoons unsalted butter

1 cup stone ground/old fashioned grits

4 ounces shredded cheddar or gouda (about 2 cups)

Black pepper or cajun seasoning to taste


Instructions

  1. Shred the cheese and set it aside.
  2. In a medium saucepan, combine chicken broth, half and half, kosher salt, and half of the butter. Heat over medium until it just begins to simmer, then reduce heat to low.
  3. Slowly whisk in the grits and cook for 15 minutes, stirring occasionally until soft and tender.
  4. Remove from heat, stir in the remaining butter and shredded cheese until melted and smooth. Adjust seasoning with black pepper or cajun seasoning if desired.
  5. Serve hot as a side or part of a main dish. Enjoy!

Notes

For a vegetarian version, substitute chicken broth with vegetable broth.

For extra heat, add cayenne pepper or Cajun seasoning.

Try using different cheeses like Monterey Jack or Parmesan for a different flavor profile.
