Description

Ingredients

1 1/2 pounds ground chicken

1/2 cup grated onion

1 garlic clove, minced

1/2 cup chopped fresh parsley

3 tablespoons chopped fresh mint (or 1 teaspoon dry mint flakes)

1 1/2 teaspoons Aleppo-style pepper

1 teaspoon ground coriander

1/2 teaspoon sweet paprika

Kosher salt and black pepper, to taste

1 egg (optional)

Extra virgin olive oil

1 small piece of sandwich bread (whole wheat)


Instructions

  • Prepare the Chicken Mixture: Soak a small piece of bread in water until mushy, then squeeze out the excess water. In a bowl, combine the bread with ground chicken, grated onion, garlic, parsley, mint, spices, egg, and olive oil.

  • Form the Kofta Patties: Shape the mixture into 8 oval patties, about 1 to 1 1/2 inches thick. Arrange them on a tray and chill for 15-20 minutes.

  • Grill: Preheat your grill or indoor griddle to medium-high heat and grease the grates. Grill the patties for 4-5 minutes on each side until fully cooked.

  • Serve: Serve warm with your choice of sides like rice, pita bread, or yogurt sauce.
